[ご飯・丼物] ひじきと根菜のご飯
■材料(４人分)
米・・・４００ｃｃ
鶏もも肉・・・１００ｇ
ひじき・・・２０ｇ
干ししいたけ・・・３個
ごぼう・・・1/2本(８０ｇ)
にんじん・・・1/2本
油揚げ・・・１枚
万能ねぎ・・・２本
ごま油・・・大さじ1/2
＜調味料＞
だし汁・・・１カップ
酒・・・大さじ２
しょうゆ、みりん・・・各大さじ１
■作り方
１．米は洗ってざるに上げ、３０分置く。ひじきは水にもどし、
干ししいたけはぬるま湯１カップでもどし、
軸を取り除いて薄切りにする。(しいたけのもどし汁はとっておく)
ごぼうは細いささがきにして水に５分さらして水気をきる。
にんじんは皮をむいて長さ３ｃｍのせん切りにする。
万能ねぎは小口切りにする。油揚げは熱湯をかけて油抜きをし、
縦半分に切ってから幅５ｍｍに切る。鶏肉は１ｃｍ角に切る。
２．鍋にごま油を中火で熱し、ごぼう、にんじん、ひじき、
鶏肉を順に加えて炒める。
全体に油がなじんだら油揚げ、干ししいたけ、
調味料を加え１２〜１５分煮る。
３．ひじき煮の煮汁としいたけのもどし汁を計量カップにいれ、
水をたして合わせて２1/3カップにして炊飯器に入れ、
米を加えて混ぜ、普通に炊く。
炊き上がったら１０分蒸らし、ひじき煮を加えて混ぜ、
器に盛って万能ねぎを散らす。
