■材料(６人分)
豚バラ肉(かたまり)・・・１ｋｇ
・おから・・・１カップ
・水(または米のとぎ汁)・・・適宜
煮汁
・梅酒・・・２カップ
・水・・・１カップ
・しょうゆ・・・大さじ２1/2
・しょうがのうす切り・・・４〜５枚
梅酒の梅・・・６個
絹さや・・・８枚
・塩・・・適宜
練り辛子・・・好みで
■作り方
１．鍋に豚肉、おから、水をいれ、１時間半くらい下ゆでし、
ゆで汁につけたまま冷やす。おからを洗い流して６ｃｍ角に切る。
２．絹さやは塩少々を加えた湯でサッとゆでて水にひたし、
斜めせん切りにする。
３．鍋に①の豚肉、煮汁の調味料を入れて、強火にかけ、
煮立ったらアクをとり、落とし蓋をして
弱火で煮汁が半分になるまで煮含める。
途中で梅酒の梅を加える。
４．器に豚肉と梅を盛り合わせ、絹さやを彩りに散らし、練り辛子を添える。
