衣
・卵・・・１個
・水・・・大さじ１
・小麦粉・・・1/4カップ
・紅しょうが(みじん切り)・・・小さじ１
・青のり粉・・・小さじ１
揚げ油・・・適量
うどん麺・・・４玉
大根・・・５ｃｍ(２００ｇ)
しょうが・・・１かけ
青ねぎ・・・２本
卵黄・・・４個
削りかつお・・・１袋(３．５ｇ)
うどんつゆ
・めんつゆ(２倍濃縮タイプ)・・・1/2カップ
・水・・・１カップ
・みりん・・・大さじ１
・砂糖・・・大さじ１
・酢・・・小さじ1/2
■作り方
１．大根、しょうがはすりおろし、青ねぎは小口切りにする。
２．うどんつゆは酢以外の材料を鍋に入れてひと煮立ちさせ、
酢を加えてすぐに火を止めます。常温程度に冷やしてから、
冷蔵庫でさらに冷やしておきます。
３．タコは縦、横に網目の切り目を入れてから半分に切り、
混ぜ合わせた衣をからませて、１８０℃の油で揚げます。
４．たっぷりの湯を沸かして、うどん麺を湯がき、冷水にとって、
冷やします。
５．器に水気をしっかり切ったうどん麺を入れて①、③の具と卵黄、
削りかつおをのせ、②のつゆをかけます。
