[洋菓子] ガトーショコラ
■材料(直径18cmの丸型×1)
製菓用スイートチョコレート・・・190g
無塩バター・・・85g
卵・・・3個
グラニュー糖・・・小さじ2
薄力粉・・・大さじ1
粉糖・・・適宜
■作り方
※始めにやっておくこと
●卵を室温にもどす
●型の側面にバター(分量外)を薄く塗って、薄力粉(分量外)を薄くふる
底の形に合わせて切ったオーブン用ペーパーを敷く
●オーブンを160℃に温める
1.生地を作る
チョコレートを粗く刻み、バターを角切りにして耐熱ボールに入れ、
電子レンジに約2分かける。泡立て器で混ぜてむらなく溶かす。
2.別のボウルに卵を泡だて器で溶き、グラニュー糖を加えて混ぜる。
ボウルを70℃くらいの湯を入れた鍋に重ねて湯せんにかけ、
よく泡立てる。
3.人肌に温まったら湯せんからはずし、さらに泡立てる。
白っぽくもったりとした状態になり、泡だて器ですくい上げて落ちた後が
5秒ほど残るくらいになるまで泡立てる。
4.①に薄力粉を茶こしでふるって加え、泡だて器で混ぜてなじませる。
5.③に④の半量を加えてゴムべらでサックリ混ぜ、残りも加えて、
底からすくい上げるようにして、サックリ混ぜる。
6.焼く
準備した型に生地を流し入れ、表面を平らにならす。
160℃に入れて約50分焼く。さめたら型からはずし、粉糖をふる。
