[洋食] リコッタチーズのフライ

材料(4人分)

リコッタチーズ・・・200g
卵黄・・・2個分
パン粉・・・30g
パルメザンチーズ(すりおろす)・・・大さじ2
パセリ(みじん切り)・・・大さじ1
舞茸・・・1パック(120g)

・天ぷら粉・・・100g
・水・・・200g
ドレッシング
・レモン汁・・・30cc
・オリーブ油・・・90cc
パルメザンチーズ(薄切り)・・・60g
レモン(くし形切り)・・・1個
塩、こしょう、揚げ油・・・適宜


作り方

1.ボウルにリコッタチーズ、卵黄、パン粉、パセリ、
  パルメザンチーズ(すりおろしたもの)を混ぜ合わせ、塩、こしょうで
  味を調える。

2.天ぷら粉と水を混ぜて、衣を作る。

3.①を12等分してスプーンで形を整え、175〜180℃の
  油で揚げる。

4.次いで、ほぐした舞茸に②の衣をつけて揚げ、塩をふる。

5.器に③、④、パルメザンチーズの薄切りを盛る。
  ドレッシングの材料を混ぜ合わせ、かける。
  こしょうをふりかけ、レモンを添える。
